Innovation meets Precision: The “Colomba Express” by Luigi Biasetto

The art of pastry is an exact science where nothing is left to chance. This was the core message of the training day held yesterday in collaboration with Minetti 1980, featuring our exceptional Brand Ambassador, Luigi Biasetto.
The event focused on the challenge of combining absolute quality with process optimization. Through the Biasetto Method—inspired by the principles of Lean Manufacturing—the Master Pasticcere condensed a complex production cycle into just three hours, proving that precision, temperature control, and repeatability are the keys to a modern, efficient laboratory.
The Raw Material: “La Pasticceria Bio”
A great leavened product begins with superior flour. During the demo, the technical focus was on Molino Grassi’s organic range, specifically the Lievitati flour from the La Pasticceria Bio line. Together with Maestro Biasetto, the face of this line, we explored:
- Technical performance: strength and balance to support complex structures.
- Sourdough management: refreshment techniques and pH control.
- Processing: secrets of the first and second dough, from shaping to glazing.
Innovation and Versatility: The Savory Panettone
The day wasn’t limited to Easter traditions. A highlight of the session was an overview of the savory panettone, a product increasingly in demand for the “aperitivo” hour. Alongside the professionals in attendance, we analyzed the essential characteristics needed to achieve a versatile, soft product capable of hosting gourmet pairings, thereby expanding business opportunities for artisanal laboratories.
The meeting concluded with a technical tasting and a critical analysis of the finished products—a moment of direct dialogue that represents the beating heart of our supply chain vision.
